Recipe File

I’ve started a tumblr thingy to document/digitize/transcribe the contents of Grandma’s Recipe File, one of the few treasures I kept with me when I left Adelaide, almost 10 years ago.

After leaving home in something of a rush back in 2003, I eventually jettisoned most of the belongings I’d accumulated over 30 years, after having kept them in storage in Adelaide for a year or two after I left.

Amongst the few things I ended up bringing with me to the New World are:
– a small wooden rainbow Mum gave me ages ago,
– a stone mortar and pestle I bought for cheap at an Asian grocery,
– Grandma & Grandpa Oates’ cutlery that still makes me think of her Sunday lunches and afternoon teas and cornflakes with warmed milk,
– a chef’s knife I can’t remember when I bought that has the right heft,
– a handful of important photographs, and
– some CDs that have various meanings from various times.

Unlike other recipes, you can actually rely on these! Pretty weird, can anyone tell me why it was drawn in this way? Also like my friend Ian pointed out, the tie is in a completely wrong spot, if its supposed to be a NECK tie. I am thinking maybe I a missing part of it, maybe it came with some clothes to dress her up.

Charred bell peppers. But done on purpose! I didn’t forget about them while surfing the internet like I do when I’m bbq’ing hamburgers.

After the peppers have been charred and then cooled, you peel off the skins and put them in the food processor. And then you add them to your meatloaf recipe. Oh yah. Mike likes it – therefore, it’s a kid friendly meal. Mike’s just got that kind of palette. But now it’s low carb. No more cereal for him.

Frozen Yogurt Cups (Sunshine Cups)
low carb recipes

I have decided to call these "Sunshine Cups" since I made them the weekend of summer solstice. You can find a recipe on the side of the "’Nilla Wafers" box, but this is how I did it:

50 ‘Nilla Wafers
8 oz Vanilla Yogurt
1/2 pt. Raspberries
1/2 pt. Strawberries
1/2 pt. Blueberries
1 Container of Cool Whip
24 Cupcake Liners

Place rinsed & patted dry berries in a blender with vanilla yogurt, blend until well mixed. Empty entire Cool Whip container into a mixing bowl. Pour a few cups of yogurt mixture at a time into Cool Whip, mixing with an electric mixer. Stop adding yogurt if it starts to get too "soupy" (leftover yogurt makes a nice smoothie ;-). The mixture should be thick and creamy and slightly fluffy. Place cupcake liners in cupcake tins. Place a ‘Nilla Wafer (face up) at the bottom of each liner. Dollop 2-4 tablespoons of mixture in each cup to fill. This should yield up to 25 cups. Dunk a ‘Nilla Wafer vertically halfway into each cup. Freeze until solid. To clean the bowl, scrape sides with leftover ‘Nilla Wafers and munch it all down before the kids catch you 😉 I’m sure all types of fruit blends can work, but it worked great with what I had at hand. A cool treat for summer days when you just can’t take the heat in the kitchen.

Breakfast Heaven
low carb recipes

Call it a routine, call it boring, call it too much of a good thing, but I have the same breakfast every day and I LOVE it. Porridge Oats. Yum.

Porridge is super healthy. It’s got low G.I., it will keep you full for much longer and won’t give you a carb sugar rush.

This is the recipe I use (from Hamlyns website). It’s not so much a recipe, but the ratio of water to porridge.

Duncan Hilditch Porridge
1 cup oatmeal
3 1/2 to 4 cups water
Stir over medium heat until it simmers. Reduce heat. Stir for 5 minutes – not longer! Done!

I add in: soy milk, cinnamon, a dollop of Agave syrup (sweet but also low in GI and ok for diabetics), nuts, seeds and blueberries. Can’t get much healthier than this!

PS my blueberries are frozen, hence the ice crystals! But makes a nice texture/taste complement to the porridge.

Bitter Melon (Goya)
diabetic recipes
Image by R Scott Photography
My neighbour brought this over for me.

It’s a traditional medicine for treating diabetes in many countries. These are tiny little things and if you don’t remove the seeds you will have one Hell of a belly ache.

I fry mine or put them in a crock pot recipe.

If you are diabetic like me, do some reading up on this unusual gourd.

~~~~~~~~~~~~~~
Bitter melon contains a lectin that has insulin-like activity. The insulin-like bioactivity of this lectin is due to its linking together 2 insulin receptors. This lectin lowers blood glucose concentrations by acting on peripheral tissues and, similar to insulin’s effects in the brain, suppressing appetite. This lectin is likely a major contributor to the hypoglycemic effect that develops after eating bitter melon and why it may be a way of managing adult-onset diabetes. Lectin binding is non-protein specific, and this is likely why bitter melon has been credited with immunostimulatory activity—by linking receptors that modulate the immune system, thereby stimulating said receptors.
There’s a story behind this.
Being a diabetic, now, is sometimes a pain in the rear. Compared to growing up though, diabetes isn’t nearly as significant as it was when I was in elementary school.
Something I did which was very stupid? I used to do just that above and lie about it. Mom was so so cool about cheating–if I wanted to, all I’d have to do is ask. Maybe not always got a yes but isnt’ that true with most kids and sweets? But I used to go in the cool whip, leave finger trails and then when mom would ask my bro and me, i’d lie when it was sooooooooooooo obvious it was me.
And, naturally, fufilling his role as big bro, William has always made fun of me for it. OK FINE! It was really stupid of me to lie about it. Whenever cool whip is mentioned in my family, I feel accusing eyes gazing at me.
So when I was making this fabulous pie for Thanksgiving, I giggled and decided I’d reeact what I did as a nine year old. Shout out to my family that I can, in fact, laugh at myself 🙂
