My neighbour brought this over for me.
It’s a traditional medicine for treating diabetes in many countries. These are tiny little things and if you don’t remove the seeds you will have one Hell of a belly ache.
I fry mine or put them in a crock pot recipe.
If you are diabetic like me, do some reading up on this unusual gourd.

Bitter melon contains a lectin that has insulin-like activity. The insulin-like bioactivity of this lectin is due to its linking together 2 insulin receptors. This lectin lowers blood glucose concentrations by acting on peripheral tissues and, similar to insulin’s effects in the brain, suppressing appetite. This lectin is likely a major contributor to the hypoglycemic effect that develops after eating bitter melon and why it may be a way of managing adult-onset diabetes. Lectin binding is non-protein specific, and this is likely why bitter melon has been credited with immunostimulatory activity—by linking receptors that modulate the immune system, thereby stimulating said receptors.

There’s a story behind this.
Being a diabetic, now, is sometimes a pain in the rear. Compared to growing up though, diabetes isn’t nearly as significant as it was when I was in elementary school.
Something I did which was very stupid? I used to do just that above and lie about it. Mom was so so cool about cheating–if I wanted to, all I’d have to do is ask. Maybe not always got a yes but isnt’ that true with most kids and sweets? But I used to go in the cool whip, leave finger trails and then when mom would ask my bro and me, i’d lie when it was sooooooooooooo obvious it was me.
And, naturally, fufilling his role as big bro, William has always made fun of me for it. OK FINE! It was really stupid of me to lie about it. Whenever cool whip is mentioned in my family, I feel accusing eyes gazing at me.
So when I was making this fabulous pie for Thanksgiving, I giggled and decided I’d reeact what I did as a nine year old. Shout out to my family that I can, in fact, laugh at myself 🙂

Recipe – Beef Veggie Wraps – 1-17-2010

I decided to go a bit carb light tonight and made some lettuce wraps.
Ingredients:
1/3 lb stir fry beef
1 Jicama (about 2/3 of a lb)
2 carrots
2 tbsp mint leaves
4 green onion shoots (or shallots)
1 tbsp oregano
2 tbsp ground pepper
2 tbsp lime
1 tbsp brown sugar
2 tbsp light soy sauce (low sodium)
First off, we cooked up the beef on a George Foreman Grill for 6 minutes.
While that was cooking, my wife and I diced up a Jicama, some carrots, green onions, and mint leaves. We put those in a mixing bowl with 1 teaspoon of brown sugar, 2 teaspoons of light soy sauce, and 2 teaspoons of lime juice. Then we diced up the beef, added it, grinded on some pepper, shook on some oregano, and let it sit for a few minutes.
The whole veggie rich mix went into cabbage leaves for a wrap. We added some diced avocado for extra protein, and it filled us right up.

I was reading some pretty shocking statistics about how some children are not only not getting enough fresh fruit and vegetables each day – but some are even struggling to correctly identify certain fruits when they are presented with a picture of them. Shocking …..
Like most children, my girls are given the odd packet of crisps, sweets or chocolate here and there, but we always have plenty of fruit on hand as a first choice. Francesca is particularly fond of Bananas – or "Narnna’s" as she refers to them!!
Here she is devouring one earlier!

Challah (Recipe)

I got this recipe from the wonderful Molly Breslin. Baking challah, or any bread, from scratch isn’t difficult, it just takes some time. Most of that time is spent waiting for the dough to rise. I like baking on Sundays, and I use the rising periods for short bouts of studying.
Shosh’s Challah (2 loaves)
5 1/2 – 6 c. flour
1 T dry yeast
1/2 c. sugar
1 1/4 t salt
6 T vegetable oil
1 1/2 c water plus 2 t
1 egg
1. In a small bowl (#1), put yeast, 1 T sugar, 1/4 c water. Mix and
let it stand for 10 minutes or until it bubbles.
2. In bowl #2 put all dry ingredients: flour, salt, sugar; mix them well.
3. In bowl #3 put all wet ingredients: water, oil, egg, and the yeast mixture after it’s bubbled; mix them well.
4. Mix everything together to make the dough. If the dough is too sticky, add a little flour until you can handle it. Use your hands to mix and press the mixture until it forms a ball of dough.
5. Cover with a towel, and let the dough stand in a warm place for an hour or an hour and a half until it doubles in size.
6. Punch the dough to let out the air bubbles (this is the fun part!).
7. Let stand for 10 minutes.
8. For traditional-style challah, separate dough into six even
pieces, roll each piece into a snake either between your hands or on
the table, and make two braids. Turn the ends under so they look
pretty. You may need to keep a little flour out to keep them from
getting too sticky. Or, weave them into any design you like. Place
them on greased and floured cookie sheets.
9. Beat one egg in a small bowl. Brush both braids with egg. Let them stand half an hour, and then
brush with egg again. If you
like, sprinkle with poppy or sesame seeds after the second egg wash.
10. Let rise for an hour or an hour and a half until the loaves double in size. Be patient!
11. Heat oven to 375F.
12. Bake for 22-26 minutes or until the tops turn golden.
13. Eat all at once because it’s so yummy that you can’t stop yourself.

Unbelievable. I saw one of these in Hollywood a few weeks ago and when I went back to take a pic it was gone. I am so happy I saw this one. I almost can not believe this is a real advertisement.
Forget dieting. Forget being healthy. Eat all the cakes, donuts and cheeseburgers your stomach can take then get the BAND for Weight Loss. NO PROBLEM!!! bleh.
