Cellophane noodles (mine were labeled bean threads) were new to me, but they looked real cool 🙂 They are a good lazy cooks noodle as they are so fine they only need to be soaked in hot water to "cook". They have a nice texture and little taste so they’ll meld well with any sauce. Add any additional stir fry ingredients you may have on hand for a heartier dish.

1 bundle cellophane noodles
2 Tbsp Carrots, chopped
Several mushrooms, sliced
1 Tbsp onions, diced
2 Tbsp scallions
1 Tbsp soy sauce

Place cellophane noodles in a bowl and cover with boiling water. Saute carrots in oil until nearly tender and then add mushrooms, onions, and scallions. Fry several minutes more then add drained noodles and soy sauce. Heat through and serve. Each bundle of noodles makes one serving.
