When your bananas have gone over-ripe, turning brown/black and mushy, make this banana spread for toast.
Fork-mash 2 bananas, with 1 tsp cinnamon, 2 TBSP lemon juice, 1 tsp grated lemon rind. Bring to a boil; reduce heat to justlow enough that steam puffs gently from the mash. Cook for 15 minutes, or until most moisture has evaporated. Cool.
Spread on toast!

I do this almost every New Year’s Day. And because of the increased airflow caused by the temperature differential between the outside air and the burning charcoals under that Weber dome, it actually cooks faster this time of year!

El Palacio de los Jugos, located at 5721 West Flagler Street, is the original of a three-location minichain of indoor-outdoor markets featuring cheap Cuban food, fresh fruits, veggies, a fruit shakes, and a bakery known for it’s fresh squeezed sugarcane, fresh tamales and perfectly salty chicharones cut to order.
El Palacio de los Jugos was featured on Anthony Bourdain’s Travel Channel television show, Layover. It has been named to the Miami Eater 38, the 38 most essential restaurants in Miami according to eater.com.
