this is adapted from a vegan cookbook that rachel bought. she likes these so much we’ve made three batches in the past five days.
DRY
1.25 cups flour
1.75 cups rolled oats
0.75 cup sugar
1.00 teaspoon baking powder
0.50 teaspoon cinnamon
1.00 cup add-in treat – dried pineapple (shown), raisins, dates, candy of choice
mix dry ingredients in a mixing bowl
WET
2 tablespoons flax seed
6 tablespoons water
0.5 cup oil
0.25 cup soy milk
add ‘wet’ ingredients to a blender, in order. be sure the flax seeds turn to fine powder first, then add the rest. add to dry ingredients and fold together until you have cookie dough. drop onto cookie sheets using a tablespoon.
bake for 15 minutes @ 350 degrees. makes about 24 cookies

Relocation Readiness Manager Denise Chappell, volunteer Conversational English instructor Kristine Sims and two members of the Conversational English Program handed out free copies of their International Spouses Cookbook and chatted with shoppers at the Fort Huachuca Commissary Jan. 6. The idea for a cookbook sprang from members of the group bringing food from their home countries to meetings.

Last few times I made rendang, I was a bit underwhelmed. But I think the key, for me, is to serve it a little more dressed than just with rice (which is what every cookbook seems to recommend). It worked great here as a part of nasi lemak. All those funky, fresh, texturally varied bits around it helped tame the powerful flavor of the rendang.
O put this in a bowl for some reason; traditionally it comes on a flat plate or in a banana-leaf pouch. The bowl didn’t help any. Some day I should try eating it the way I’m told Malaysians do: just using my hands.

Adapted from The Liddabit Sweets Candy Cookbook, these golden caramels have all the delicious flavour of an apple cheesecake (including the graham cracker crust!) Made with homemade ricotta and home-dried apples, I also used Baboo milk (from Natrel) and a touch of buttermilk powder for the creamy factor.
