This is the main bit of equipment you’re going to need, as well as some bowls for whisking things in. If you’ve got an electric whisk, life will be a lot easier, but I find a hand whisk works fine; the first time I made meringue I just beat everything with a fork – took a while but it worked too.

A few nice recipes images I found:
tofu & bok choy stir fry with brown rice

Brown rice – make this ahead of time and have it on the side
Bok Choy or other choy (I used baby bok choy) – chop this up, separate the stalk bits from the leafy bits
Firm tofu – cut into cubes
A few scallions, diced
Sauce:
Lemongrass powder
Toasted sesame oil
Soy sauce (i use reduced sodium)
Minced garlic
Rice vinegar
Corn starch
Ginger (i used powdered but fresh works too)
Mix all ingredients for sauce in a bowl according to taste. I put in a ton of garlic and soy sauce, not as much lemongrass or sesame oil. Add about a teaspoon of cornstarch. Depends how thick you want the sauce I guess.
Throw it in a wok! I cooked the tofu first for a while in the sauce. Then I added the cut up stalks of the choy, since those take longer to cook than the leaves of the choy. Once that stuff looks almost done, add the choy leaves. Then sprinkle with scallions.
Voila!
