When Christmas rolled around last year, we told our son, David, that there was no need for him to spend any money on presents for us – we already have all of the toys and gadgets that we need, and we know that he’s on a tight budget (otherwise, I might have asked for an Aston Martin, or a diamond-studded Apple iPad, or perhaps a private jet).

David responded with several creative ideas, one of which was an offer to cook a "decadent meal" for us. We accepted happily, and he arrived in our apartment on Tuesday evening and promptly set about whipping together a wonderful presentation of Bucatini all’Amatriciana — which, I have been asked to emphasize, substituted traditional spaghetii in place of the bucatini pasta called for in the official recipe. My wife had shopped for most of the ingredients, and done a little chopping and basic preparation; and I contributed to the meal by stopping at the local liquor store to find a good bottle of Italian Barolo wine.

Since I have no culinary skills whatsoever, common sense dictated that I stay out of the kitchen, safely away from the people doing the "serious" work of preparing the meal. But I couldn’t help sticking my camera into the middle of things from time to time, and I ended up with this set of photos…

Slow Cooker Chicken & Dressing (crock pot)

This dinner is especially tasty! The stats for this one aren’t that great, but keep in mind this usually makes more like 6-8 servings for my family.

4 boneless skinless chicken breasts
Salt, pepper
4 slices cheese (swiss or american)
1 can chicken broth
2 cans condensed cream of chicken/celery/mushroom, your choice
6 cups packaged stuffing mix
1/4-1/2 cup butter, melted

Place chicken in bottom of slow cooker. Add salt & pepper. Top each breast with cheese slide. Add broth & soups. Sprinkle stuffing mix over top. Pour melted butter over all. Cover and cook on low 6-8 hours or on high for 3-4 hours.

Nutrition Facts: Makes 4 servings. 589 calories, 28.9 fat, 37.7g carbs, 1.7g fiber, 42.3g protein.
