“That Chocolate Cake”

"That Chocolate Cake" is from the Scharffen Berger "The Essence of Chocolate" cookbook. It’s moist, it’s fluffy, it’s rich, it’s dark, it’s velvety, it’s luscious, and it’s sinful. It’s so many things, and yet, really, it is just that chocolate cake. I baked this (and others) for my friends’ 40th wedding anniversary party. Not surprisingly, it was the first cake to go.
Per the recipe, this is a two-layer cake layered and frosted with a dark (99%) cooked ganache. I took to decorating the cake on the outside with cake crumble, which is not in the recipe. (See a cross-section here.)

Inspired by both the blog Alinea At Home (http://alineaathome.typepad.com/) and by Grant Achatz’ comment from the November 2008 issue of Chicago magazine where he said:
"…the recipes are not hard. I challenge anyone to find a recipe in that book that is more complicated than your basic scratch chocolate cake,”
I have taken it upon myself to cook as much from the Alinea cookbook as I can.
I don’t mean to be a braggart, Mr. Achatz, but I make a mean chocolate cake.
For my first experiment, I’ve made Alinea’s take on the American lunchbox classic, PB&J.
It ain’t perfect, but I’m damn proud of how these eight little bread and PB wrapped grapes turned out.

Honey Nutlets

From the 1941 cookbook of The Infant Welfare Circle of the King’s Daughters, Appleton, WI
1 C shortening (ed. – I used butter. Shortening has no place in my house)
1 C brown sugar
1 C honey
1 egg, well beaten
4 C flour
1/2 t baking soda
1 t salt
1 t cinnamon
2 C nuts (I used pecans)
Cream shortening and sugar. Add honey (strained if needed), well beaten egg, and dry ingredients. Add nuts last. Drop in small spoonfuls on well greased sheets. Bake 15 minutes at 350 degrees.
Can be in airtight container for two weeks.
Yield: around 7 dozen if you make them small (see above), less if you like larger cookies.

In addition to marketing cooking to dad, the Penny Powers division also focused its attention on children with a cookbook and a Saturday morning cooking children’s show. Some people may even remember watching the show as Martha Allan (Penny Power) and June Jacobs baked and cooked kid friendly meals.
