I baked apple muffins.
Recipe from Martha Stewart:
Ingredients
Makes 12
Vegetable cooking spray
1 medium Granny Smith apple, peeled, cored, and quartered
1 cup sugar
2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon plus 2 pinches salt
1/2 teaspoon ground cinnamon
1/4 cup chopped walnuts, toasted (omit if serving to children under 3)
2 large eggs
1 cup buttermilk, room temperature
1/2 cup (1 stick) unsalted butter, melted
Directions
Preheat oven to 400 degrees. Spray a 12-cup standard muffin tin with cooking spray; set aside. Cut 3 apple quarters into 1/4-inch dice; cut remaining apple quarter into 12 thin slices for garnish.
Whisk together sugar, flour, baking soda, salt, and cinnamon in a medium bowl.
Add diced apple and walnuts, if using; toss to coat.
Whisk together eggs, buttermilk, and butter in a small bowl. Gently fold buttermilk mixture into flour mixture until just combined; do not overmix.
Divide batter among muffin cups, filling each about three-quarters full.Top each with an apple slice.
Bake until muffins are brown around edges and spring back when touched, 16 to 18 minutes. Let muffins cool slightly, about 5 minutes, before turning out of tin onto a wire rack. Serve warm or at room temperature. Muffins can be stored in an airtight container at room temperature up to 2 days.

Recipe time – coincidentally on National Pretzel Day (April 26)!
These are delicious low carbohydrate, healthy fat pretzels which I made as an alternative to the tasty ones served at our favorite local beer garden in Washington, DC.
They have the magical property of not raising blood sugar, because they have no grains (refined or whole) and no industrial vegetable/bean/seed oils.
Actually, no magic involved, it’s the science we learned in medical school, we are just now applying it :). Enjoy in good metabolic health.

What I like most about the George Foreman Grill, compared to other ways of cooking meat, is it solves my tendency of overcooking.
Recipe is brain-dead simple:
1. Make a marinade by filling a bowl with soy sauce. Mix things into it for flavor.
This time around I used crushed ginger, crushed rosemary, crushed garlic, and brown sugar. The garlic perhaps should have been roasted a little beforehand to kill its bitterness. I’m not sure if the brown sugar had an effect or not.
2. Get a container you can seal water-tight (zip bag, tupperware something, etc.; I prefer the bag since it requires less liquid). Put chicken in the container and fill the rest of the container with marinade.
I immerse the chicken in the marinade first, then put it in, then fill it up. I don’t know why.
3. Let sit in fridge for at least 4 hours.
4. Grill according to the guidelines that came with the grill.

Led by pitmaster Jonathan Burrows, Mr. Cecil’s California Ribs, from Los Angeles California, served Beef Ribs with Cajun Hot Links and Cucumber and Tomato Salad.
