2010-05-30 : Pie of Aloes

A sequence of images from the Spring Bank Holiday Weekend in the Tudor Kitchens at Hampton Court Palace.

Marc H. was making a recipe, ‘Pie of Aloes’. Aloes are fake larks (from the French) made of thinly beaten steaks of mutton (in this case) wrapped around a filling of boiled egg yolks and herbs (parsley?).

The ‘aloes’ are then baked in a pie, (a bit like "four and twenty song birds…").

However, the paste Marc made was a bit firm/crumbly he called on the expert hands of Robin to raise the pie crust and complete the pie. The end result was a bit "craggy" but it did hold together when baked. I didn’t see the final product, (it was eaten before I had a chance the next day) but Richard, (Tudor Cook), got a picture of it on his ‘Cooking The Books blog ( tudorcook.blogspot.com/2010/06/just.html ).
