Recette de salade de bébés épinards, canneberges, figues et fromage de chèvre.

* Bébés épinards.
* Canneberges.
* Noix, entières ou en gros morceaux.
* Fromage de chèvre, réduit en petits morceaux.
* Mayonnaise à l’huile d’olive.
* Figue (1/personne).
* Beurre.
* Sirop d’érable.
Dans un bol, mélanger tous les ingrédients sauf les figues, le sirop d’érable et le beurre.
Couper les extrémités des figues, puis trancher chaque fruit en 4-6 tranches. Dans une poële, faire chauffer un peu d’eau à feu moyen (juste de quoi recouvrir le fond), y ajouter du beurre et du sirop d’érable. Une fois le mélange à ébullition, y faire cuire les figues jusqu’à évaporation du liquide et qu’elles soient tendres et dorées.
Ajouter les figues sur la salade, servir.

BBQ Grippos Chicken Tenders

Recipe:
2 lbs of chicken breast meat, trimmed and cut into 1" wide strips
1 c flour
1 t salt
1/2 t black pepper
1/2 t onion powder
1 t garlic powder
1 t paprika
1 egg
1 1/2 to 2 cups of BBQ Grippos seasoning and chip fragments* (supplement with breadcrumbs – Panko preferred – if you don’t have enough)

Preheat oven to 400 degrees F
Ready a baking sheet using either a wire cooling rack (crispiest results) or parchment paper.
Using three shallow dishes set up the following
Dish 1: blend of flour, salt, black pepper, onion powder, garlic powder, and paprika
Dish 2: lightly beaten egg
Dish 3: BBQ Grippos seasoning and chip fragments
Dip each strip in the flour mixture, then the egg, then in the Grippos coating
Place on the cooking sheet, lightly cover each with cooking spray
Bake for 15 minutes, flip each strip, and lightly cover the now exposed side with cooking spray
Bake until they reach an internal temperature of at least 165 degrees F
You can store the cooked strips in the fridge for up to 4 days, in the freezer for up to 2 months. To reheat, put them in a 350 degree oven.
* the smaller the fragments the better they will stick, mine were too big
