Frozen Kale Ice Cubes

2 c water
1/3 c quick-cooking tapioca
1/2 c sugar
1/4 t salt
1 1/2 to 2 c crushed, sweetened berries
1 t lemon juice
Place water in top of double boiler and bring to a boil over direct heat.
Combine tapioca, sugar, and salt; add gradually to water and bring to a brisk boil, stirring constantly.
Place immediately over rapidly boiling water and cook 5 minutes, stirring occasionally.
Cool – mixture clears and thickens as it cools.
When slightly cool, fold in berries and lemon juice.
Chill.
Serve in sherbet glasses. Garnish with whipped cream and a few whole berries.
Serves 6.

This is the main bit of equipment you’re going to need, as well as some bowls for whisking things in. If you’ve got an electric whisk, life will be a lot easier, but I find a hand whisk works fine; the first time I made meringue I just beat everything with a fork – took a while but it worked too.
