Here’ s a cooking tutorial in the spirit of that lemon pie recipe that made the rounds awhile back.

A few other notes:

– The annato seeds are apparently very difficult to grind up (Robert Rodriguez recommends using a coffee grinder on the "Once Upon a Time in Mexico" DVD), but I was fortunately able to buy them in pre-ground form. Since they were already ground, I adjusted the recipe to use 3 tbsp instead of 5.

– I bought a bottle of pre-minced garlic, so I wasn’t sure how much to use. I ended up using about 2/3 of a 1 oz. bottle, and that seemed to work out fine.

– To devein the peppers, cut off the stem at the top, cut the peppers in half, and then clean the seeds and white stuff out of the inside. I mention this because I was unsure what that meant at first.

– Perhaps it’s just the high altitude here in Denver, but we ended up cooking the pork for a lot longer than 4 hours (we did something like 6) and probably could have done it longer to make it even more tender. I think this is one dish it would be difficult to cook for too long.

Recipe:

Hard boil three to four eggs, remove from water and tap with spoon to break shell. Return to water and add one sliced clove of garlic, one stick of cinnamon, pinch curry, 1/3 cup soy sauce, and simmer on low for 1- 1 1/2 hrs. Peel eggs and eat with hot sauce.

Our son and daughter-in-law chose this location for this year’s spring trip to the Outer Banks of North Carolina, putting us right on the ocean front beach. It was a great location right beside Jeanette’s Pier, and the weather was so sunny. There were some windy days that made the waves all that much better. Besides our family from Ohio, we had friends visiting from several Congregations neighboring ours, plus a family that drove from mid-Texas and another from Indiana. As usual, we took turns making meals and it was a great experience with everyone fellowshipping and working together peacefully. Yes, I had one conference call with World Headquarters I did not want to miss, but it was still total relaxation. I tried to go a whole day without touching a camera, but then I got the shakes, and I just had to grab a camera and start snapping again; when you are hooked, you are hooked.
