Last week my mom and I went down to my grandma’s house to go through some stuff. I asked my cousin about a few of my grandma’s recipes so I could take a few photos of them. She showed me all of grandma’s recipe boxes, they were filled with cards she’d written recipes on and clippings from magazines. She also showed me my great grandma’s recipe book. It was a collection of recipes scratched and pasted in to an old Railroad Ledger. It’s so great to see old well-used recipes written by my grandmothers.

I’m planning on taking these and making each one, taking photos and making a cookbook of family recipes, including photos of the recipes written by my grandma’s. I think this will make a wonderful Christmas present for family members.

we enjoyed some energizing mint tea at a rest shop while on the long drive to the North African coast

After sampling various mint teas throughout Middle-East and Africa I found the "perfect" recipe (a very typical recipe for North African Mint Tea):

Ingredients:

8-12 leaves of fresh mint
4-6 leaves of fresh sage
1-2 sprigs of chamomile
1-2 t of "gunpowder" green tea
lots of sugar

In a small tea pot, add all ingredients, add boiling water to the fill, allow to steep for 3-5 minutes.

Serve in small glasses pouring from above the glass to create the traditional "foam" (takes some practice doing this – be careful).

substitute dried sage but use much less as dried sage tends to be much stronger and can give the tea a very bitter taste.

Today I wrote a post about my grandmother. She made all of her own soap, from fat collected during cooking. I dug up her handwritten recipe today. It’s amazing how vague it is! Soapmaking is serious stuff and needs to be done carefully, but apparently she knew what she was doing.

Doing this project has been more work than fun and I’m looking forward to working more with them.

So what is biltong???

Biltong originated when The Dutch settlers who arrived in South Africa in the 17th century brought recipes for dried meat from Europe, including France and Spain. Today it is sold all over the world and has even become a household name in countries like the U.K., Australia, New Zealand, Holland and Spain…

Biltong is a kind of cured meat. Many different types of meat are used to produce Biltong, ranging from beef through to game meats. Biltong is similar to beef jerky in that they are both spiced, dried meats, but differ in their typical ingredients, taste and production process. The word biltong is from the Dutch Bil ("rump or buttock") and tong ("strip" or "tongue")… Brown vinegar along with Spices from all over the world is used to spice and cure the meat. Biltong is very high in protein, iron and magnesium and it is a very healthy snack. It is typically low in fats and carbs…

It is conventionally consumed accompanied with Beer and other beverages but can also be part of salads, sandwiches or part of you apero.

Now a bit more about trois fréres Biltong…
