Day One Hundred and Thirty Two – Dinner for Four

Had family over for dinner tonight. Three of us had chicken breast stuffed with spinach and edam cheese, covered in Ray McVinnie Tomato Sauce, with added basil and a little bit of Heller’s middle bacon.
The meal in front was for someone who has problems eating tomato, so instead I stuffed it with lite cream cheese, semi-dried apricot and strips of Heller’s middle bacon. The ramekin has a little tomato sauce in it, just for them to try.
All meals served with steamed carrots, broccoli and cauliflower.
