Melon & Beef

Hollow out a melon, and we mix the minced flesh of the melon with minced beef. Then fry it slowly (15 minutes) melon and beef togeteher, adding salt and pepper, until the beef is completely browned.

Separate the liquid and put the mix inside melon skin. Add just some cheese slices on top, and put the two melon halves in the microwave for 4 minutes to melt the cheese. I have used ‘sage derby’ (http://en.wikipedia.org/wiki/Sage_Derby_cheese) so that the recipe has a green look.

Fried okra is revered in my home state of Texas, and this is a delicious variation.

I quickly discovered that even before forming the rice into little cake, the rice mixture itself was so good that I feared we ate too much of it to make it to the frying stage. All you need to do is throw some shaved manchego on top of the prepped rice and you’re good to go for an amazing side dish. But, where’s the fun in that? Push your sleeves up, dig in, and get your hands gloopy making these rice cakes. Fry them up and enjoy.

Recette de focaccia aux escargots

Une recette facile, délicieuse et bien roborative.

Portions
2 personnes, ou 1 affamé.

Ingrédients
• Pâte à pain, la grosseur d’un poing.
• 125 grammes d’escargots.
• 1 oignon tranché.
• 1 gros champignon portobello tranché.
• Fromage parmesan rapé, au goût.
• Vin blanc (pinot gris dans mon cas).
• De la crème 35%.
• 1 boule de mozzarelle de bufflonne ou gros morceau de bocconcini.
• Gras de canard.

Préparation
Faire sauter les escargots dans le gras de canard à feu vif. Ajouter les oignons et le champignon et chauffer jusqu’à ce que les légumes perdent leur liquide et soient légèrement dorés.

Diminuer l’intensité du feu à moyen, et ajouter du vin blanc. Réduire, et ajouter de nouveau du vin, au goût. Ajouter le parmesan rapé et la crème, réduire jusqu’à ce que la consistance permette d’étendre le mélange aisément sur la pâte sans qu’il ne coule, mais de manière à ce qu’il reste onctueux.

Étendre la pâte pour former un cercle d’environ 3 cm d’épais. Avec le poing, amincir le centre. Placer la pâte sur une pierre à pizza préchauffée pendant 2 minutes à 260c (500f) pour la précuisson, puis la sortir de la cuisinière pour la garnir.

Étendre le mélange d’escargots sur la pâte, disposer les morceaux de mozzarelle sur le mélange et remettre au four pendant 15 minutes à 260c (500f). Garnir de basilic et de poivre.

Accompagner d’un vin blanc italien.
