Cook yellow onion in 3 tbps butter in a sauce pan, stirring until softened. Add chopped up asparagus pieces and salt and pepper to taste, then cook, stirring, 5 minutes. Add 2.5 cups chicken broth, thyme, and simmer, covered, until asparagus is very tender, 15 to 20 minutes. Then blend with immersion wand, and stir in vermouth, lemon juice, and sour cream. top with croutons.
