Hoppin’ Vegan John (01)

Eating Hoppin’ John —a Southern dish of black-eyed peas, greens (usually collard), and pork— on New Year’s Day is thought to bring a prosperous year filled with luck.
On New Year’s Day 2015, Hoppin’ Vegan John took several liberties: soaking the beans with ‘liquid smoke’ for ‘porkiness,’ substituting quinoa for rice and spinach for collards, and finishing with a spicy tahini sauce. Dash it with smoked paprika.
No sentient being was harmed for this meal. In 2015, spare a pig!
