It’s cold today, so time for soup. Add your own to the It’s Soup! group.

The recipe, as previously posted elsewhere. I baked the tortilla chips this time — not nearly as tasty but healthier. And I used the tomato sauce I made with the first batch of tomatoes I’ve ever grown — honestly can’t tell the difference between that and the canned ones.

Tortilla soup

Chicken soup with the added benefit of vitamin C-ful tomatoes and lots of cayenne pepper to clear your sinuses. Or you can think of it as spicy minestrone with tortillas.

I’m not so much on the measuring, and things like this depend a lot on your specific taste, so these are rough guidelines rather than instructions, and you should ignore them whenever possible so you end up with the soup that is right for you.

corn and/or flour tortillas
stock/boullion
some chicken
an onion, maybe two
some tomatoes, or a can this time of year
garlic
bitty pasta — noodles, stars, ABCs, etc.
cayenne pepper or other hotcha seasonings of choice
possibilities: carrots, corn, potatoes

[The vegetarian version of this would lack chicken, and use vegetable broth of some sort.]

Slice up some corn and flour tortillas and fry them in vegetable oil til brown, then drain on paper towel and put in over to keep warm while you make your soup.

Get your chicken stock boiling [I use boullion cubes], then liberally sprinkle with cayenne pepper and toss in your cubed chicken. Start a pan on the other burner with a bit of oil and sautee your chopped onions. Add in chopped-up tomatoes and some garlic when the onions are translucent. Combine ingredients of pot and pan [I find a really big pot works here] and add your pasta [how much depends on if you are a soupy-soup type of person or you like your spoon standing; I think you can guess which I am], then simmer until you are ready to eat.

This is the point where you put a big handful of those tortilla strips in a big bowl then drown them in the soupier part of this adventure. Hence the name.

My husband has inspired me to take healthier lunches, so I’ve made salads this week. I make them before I can think about what I might really want to eat because I’ll end up with something completely different if I base my choice on desire, rather than sensibility. Did I mention that my boss brought cinnamon rolls to our Admin Team meeting this morning? Sensibility fail.

Anyone who knows me, knows that I am into healthy eating and am always banging the drum where diet and exercise are concerned!

I was reading some pretty shocking statistics about how some children are not only not getting enough fresh fruit and vegetables each day – but some are even struggling to correctly identify certain fruits when they are presented with a picture of them. Shocking …..

Like most children, my girls are given the odd packet of crisps, sweets or chocolate here and there, but we always have plenty of fruit on hand as a first choice. Francesca is particularly fond of Bananas – or "Narnna’s" as she refers to them!!

Here she is devouring one earlier!

If you have some herbs or spices that you feel go well in a salad, add them now. I use some Italian herb seasoning which you can buy in any grocery store or supermarket, and comes in a little bottle. If you can find bottles or bags of Salad Mix, you’re even better off.

Add your spices of choice, if any, to the salad and then add, in this order, the balsamic vinegar, the white wine vinegar and the olive oil.

For the vinegars, hold your thumb on the opening and just drip each on there a little. If you like your food a bit spicier and more acidic, add some more of the vinegars.

A regular ratio between oils and vinegar is: 6 parts oil, 1 part balsamic and 1 part white wine vinegar.

What I do myself: 4-5 parts oil, 1 part balsamic and 1 part white wine vinegar. I don’t like to drown the salad in olive oil and have that dominate the taste, and I don’t want the salad to taste a little dry either.

If there’s any challenge at all in making this salad, it would be the ratio between oil and vinegars. This, ultimately, makes or breaks the flavor and overall quality of the salad. Fortunately, experimentation leads to experience, so just pay attention to how much you use each and learn from every time you make the salad.

Not so much on a diet but trying to make intelligent choices when it comes to eating. Throw a little exercise in the equation, and I already feel a bit better about myself. Hopefully I’ll stick with it. With yummy food like this, it shouldn’t be that hard. :-)

I attended a big launch session at work today with about 400 colleagues. In between the presentations, we were given some snacks.

So about 3 PM, I wander to the snack table and see the following selection.

A selection that’s both high carbohydrate and high fat. And definitely not worth taking insulin to eat.

What happened to fruit as a snack choice?

Full disclosure: I knew they wouldn’t have anything ‘good’ to eat. So I bolused about 10 minutes before break time and ended up having an ice cream bar, slowly. My blood sugar ended up staying pretty close to normal.

There is no cure for Type 1 or Type 2 diabetes.

Yet.
