Sauté onions for ‘veggie’ paté

Sauté onions with roasted ground coriander seeds, thyme, oregano, Chinese 5-Spice.

A ‘veggie’ paté, made with green beans, tofu, toasted walnuts, and dill pickles. It can be shaped like a paté, but it’s really more of a spread.

Cooking an Artichoke: Simmer right-side-up

After simmering the prepared artichoke upside-down for 20 minutes, covered: grab with tongs, turn right-side-up. Be sure stock pot has 1/2 inch of water and bring to boil. Reduce to a strong simmer, cover and simmer for 20 minutes. Don’t lift the lid!

Step 1. Trimming the leaves.
Step 2. Simmer upside-down
Step 3. Simmer right-side up.
Step 4. Eat the leaves.
Step 5. Preparing the choke.
Step 6. Removing the ‘hair.’
Step 7: Eating the choke.
